½ cup (1 stick) unsalted butter,at room temperature
2/3 cup extra-chunky peanut butter
1 cup packed light brown sugar
2 large eggs
1 cup all-purpose flour
1 cup finely ground old-fashioned oats
1)heat oven to 350°F
2)In a mixing bowl,cream butter,peanut butter,and sugar until smooth.
add eggs and blend.
3)Stir flour and ground oats into creamed mixture.
4)Using either an individual 1/4-cup measure or a 2-ounce ice-cream scoop,scoop level amounts of dough and drop 2 inches onto ungreased cookie sheets.
5)Bake until cookies are golden brown,18-20 minutes.Using a spatula,transfer cookies to a rack and let cool.
Makes about 12-14 cookies.
