Another cookie from the book big,sof,chewy cookies by Jill Van Cleave.I think it call bar cookies!
And these was very easy to do!And alredy eaten!
½ cup (1 stick) unsalted butter,at room temperature
1/3 cup confectioners´sugar,plus 1 tablespoon for garnish
1 cup plus 2 tablespoon all-purpose flour
2 large eggs and 1 large egg yolk
3/4 cup granulated sugar
3 tablespoon freshly squeezed lemon juice (about 1 lemon)
1)heat oven to 350°F
2)in a mixing bowl,cream butter and 1/3 cup confectioners´sugar until smooth.
3)add 1 cup flour and mix to form a crumbly dough.spred into an ungreased 8-inch square baking pan and press to pack evenly in the bottom of the pan.
4)bake until lightly golden,about 15 minutes.
5)meanwhile,beat whole eggs and yolk in a mixing bowl until foamy.add granulated sugar and 2 tablespoons flour and beat until thick and smooth.add lemon juice and blend.
6)when crust is baked ,remove from oven and pour lemon topping over the hot crust.return to oven and bake until topping is set and golden brown,about 15 minutes.place pan on a rack and let cool;sift 1 tablespoon confectioners´sugar evenly over the top and cut into 2½x2 bars
makes about 12 bar cookies.
